Salmon Cakes with Whipped Avocado

Essential Ingredients: salmon (I used canned), mayo, salt and pepper, oil

Other Good Ingredients: onion, herbs (dill, parsley …), fresh lemon juice, mustard, panko or crushed saltine crackers

Drain salmon (if using canned) and mix with a big scoop of mayo. Add salt, pepper, onions, herbs, lemon juice, mustard, and any other flavorings. Spread panko on a plate and heat 1-2 Tbs oil in a skillet. Shape salmon mixture into patties and press into panko on both sides. Add patties to skillet and cook for a couple minutes per side. Meanwhile, scoop avocado into a bowl and use a fork or whisk to whip it until it it smooth. Dollop on top of patties and serve.
